Instructions

1. Grind garlic, shallots, candlenuts, keluak nuts, turmeric, and cooking oil. Add water and blend until smooth.

2. Sauté the spice paste over low heat until fragrant, then add lemongrass, kaffir lime leaves, and bay leaves. Sauté until aromatic.

3. Add water, bring to a boil, then transfer to a pressure cooker.

4. Add beef shank, tomato, spring onion, salt, beef bouillon, ground pepper, and sugar. Pressure cook for 60 minutes.

5. For the sambal, blend red chilies and garlic in a food processor until smooth.

6. Heat a bit of cooking oil, briefly sauté the red chili mixture, then add water, salt, sugar, and beef bouillon. Cook until it thickens, then set aside.

7. Serve the Rawon in bowls, garnished with salted eggs, bean sprouts, lime wedges, sambal, and fried shallots. Enjoy your Indonesian culinary delight! (*)
